I cant seem to find the NPC Cassandra at the Crafting studio where did she go?

She was removed a long time ago so you wont find her. Maybe only in special event cases but that is when GMs announce it.

All quests are optional except the Change job ones but you can change job with the IM change job stone

Cassandra is there, but only in Isen server. The fact that you see it in the possible quests list in Jainus is a bug.
