I used to try and change the resolution with my mouse half a screen off - it takes patience. Having a 2nd screen does help

Try setting your monitor's resolution the same as the one in game, then start up the game, put it in windowed mode - change monitor back to native.
IDK if that will even work, but it's what I'd try first if it happened to me.
